After trying @lakantoaustralia Choc Coconut Ball M

After trying @lakantoaustralia Choc Coconut Ball Mix and their Golden Malt Flavoured Syrup, I’m really impressed! The mix is super easy to prepare, and unlike some other brands, it doesn’t have that chalky aftertaste. I added the Golden Malt Flavoured Syrup for a touch of extra sweetness, and it turns out perfectly balanced—not overly sweet at all. Joel's feedback was to add more of the syrup.

These choc coconut balls are perfect for a child’s lunchbox or an adult’s lunchbox for that 3pm chocolate craving. Plus, the Golden Malt Flavoured Syrup makes a fantastic swap in ANZAC biscuits—it’s definitely worth experimenting with! I just wish Lakanto made a larger version of the ball mix so I could make them in bulk—they’re that good!

This year hasn’t been without its challenges, particularly with my endometriosis and the complications that came along with it. It’s been a tough ride, but I’ve learned so much about resilience, self-care, and the importance of a support network. I truly appreciate all my family, friends and colleagues from my hospital job who have been there for me along the way.
